Sweater Knitting and Pot Pie!

Happy Monday morning everyone. Are we all ready for another week? We had the strangest weather day yesterday. It was sunny when we went to church, but drizzling a little bit of rain when we left. We went to Arby’s for lunch with about 10 other people and while we were there the wind started blowing and the rain and snow was literally going sideways. We ended up sitting and talking for over an hour waiting for it to stop, at least a little, so we could run to our cars. 15 minutes later it was completely blue sky again and it stayed beautiful the rest of the day. So strange.

I have been doing nothing craft wise except knitting on Dennis’s sweater. Here is my progress as of this morning.

Yes, there is some dog hair on there. Chloe is shedding her winter coat all over everything. I have a feeling the sweater will only be worn when he is not at home. Ha! I have just switched needle sizes and have started knitting the bottom ribbing.

Last night I made another chicken pot pie it was so good I thought I would share the recipe with you.

You can make your own pie crust or cheat like I did. :-)  I bought two premade crust’s in the freezer section and just inverted one over the other. They are so good that I don’t even miss my homemade crusts. I have always made my own piecrust, but have had difficulty standing long enough to roll them out because of my back issues. I am so glad I discovered this because we both love homemade chicken pot pie. 

I bought a roasted chicken at Costco last week and this was our fourth meal from that $4.99 chicken. I still have enough chicken in the freezer for another meal. Not bad for five dollars.  Five meals! There was a LOT of meat on that chicken.

Here’s the recipe from the Betty Crocker cookbook I’ve had since we got married. I rarely make any changes to the recipe.

Chicken Pot Pie
1/3 cup margarine or butter
1/3 cup all purpose flour
1/3 cup chopped onion
1/2 teaspoon salt
1/4 teaspoon pepper
2 cups chicken or turkey broth
2/3 cup milk
2 cups cut up cooked chicken or turkey
10 ounce package of frozen mixed vegetables

Heat margarine over low heat until melted. Blend in flour, onion, salt and pepper. Cook over low heat, stirring constantly, until mixture is smooth and bubbly; remove from heat. Stir in broth and milk. Heat to boiling, stirring constantly. Boil and stir one minute. Stir in chicken and frozen vegetables

This is where I differentiate from the recipe. You can make your own piecrust or pour the mixture into a premade pie shell. Invert a second shell over the first one and pinch edges to seal. Cut slits in the top for ventilation. Cook uncovered in a 425° oven until the crust is brown, about 30 minutes.

  1. WOW! I can't believe how far along you are on the sweater for Dennis. You will have that finished in no time Betsy. It is so beautiful. Love that shade of yarn. Your pot pie looks delicious. I've been trying so hard to really eat healthy (more plant-based and limiting carbs), but I may have to cave and make one of these. Thanks for sharing your recipe.

  2. I can't wait to see Dennis' sweater completed. I love the color. We like chicken pot pie and I use store bought pie crusts too. I make the world's worst pie crust from scratch!

  5. The weather was indeed very strange yesterday! We had a similar squall blow there here too. Like you said, it didn't last long, thankfully! Dennis' sweater is going to be amazing! You sure work fast! I love chicken pot pie too. We often buy Costco's rotisserie chicken, and get many meals from it too. I like to boil the bones down, and make a pot of soup from them too. Its amazing how far a meal can stretch with one chicken! Enjoy meeting your friend for lunch! Sounds wonderful :)
    And congratulations on winning one of the books sweet Cheryl is giving away! Isn't it amazing we both were winners! I can't hardly believe it :)

  11. There were gusts of wind here on Sunday...some 40mph! One gust made it into my patio area, rippled the rug and toppled a plastic table! But we had some sunshine, too. Your knitting is amazing!   12. Jerry and I love chicken pot pie... I really need to make one - and use your easy recipe! That crust looks yummy! Ever since I was a little girl, my favorite part has been the crust! You've really come along on Dennis' sweater... you are the fastest knitter I know! I like that dark blue - Dennis really picked out a handsome color.   13. The progress on the jumper is amazing your knitting needles must be on fire you are so quick. The pot pie looks so tasty, it is one of our favourites but I don't make it very often. You did so well getting five meals from the chicken, well done. Thankfully the wind has now abated here and we can enjoy a few days reprieve. we are hoping to get out for a walk and enjoy our beautiful surroundings. Take care.

  14. My youngest boy in Albany, NY said it was 50 degrees yesterday and felt very abnormal. We are having gray windy weather with a chance of rain. The sweater is gorgeous. Love the color. I've been wanting to make a vege pot pie -- one of these days I'll get around to it. Take care.

  15. You've made amazing progress on that sweater! Wow. I bet we have the same Betty Crocker cookbook. MY ex MIL gave it to me for a wedding present. It's in terrible condition but in spite of 44 years of hard wear it's still my go to source for recipes.

  18. The sweater is really coming along! Your recipe is the same as what I made except I did make my homemade crusts and I used turkey since I had some in the freezer. I know what you mean about the back. Mine is fine unless I stand for too long. Not sure if it's hips or back but I have to go sit and rest a bit and then go back at it. This getting old is quite an adveture! LOL!

  25. Both look great. Never made a pot pie and I am going to try this recipe. I have a bunch of chicken fanatics so I am sure they are going to love this. But otherwise my week was great just that pot pie replaces with chicken noodles.
